Acids
We carry two acids for enhancing sour hard candy fruit flavors. Malic is for non Citric fruit flavors such as, melons and berries. Citric is for Citric fruit flavors such as, orange, line, lemon.
Use: 1/8 tsp to 1/4 tsp per cup sugar (or to taste) Add it to hard candy after it cooks fully, then add color and oil and stir, by now it has cooled a bit and lastly add the acid and stir, then pour.
